Chinese Baijiu is a type of alcoholic beverage distilled from grain or rice. It holds a significant place in the daily lives of the Chinese people. Archaeological findings indicate that the Chinese started brewing jiu around 6,000 years ago. Over millennia, efforts have been made to refine the jiu-making process. The primary alcoholic beverages consumed in China are white liquor and rice wine. White liquor is distilled from sorghum or maize. As a cherished drink and tradition, it has been part of important events like weddings and birthdays for over 6,000 years. Six centuries ago, Chengdu was a city rich in treasures, with half of them steeped in alcohol. During that period, Dongmen, Chengdu’s earliest central business district, featured a wine shop on Shui Jing Street, with a storefront selling wine and a back workshop for brewing it. To this day, the captivating aroma of wine has lingered on this street for 600 years.
