In the summer, you might get to see their small vegetable and herb garden in the courtyard where they grow zucchini, tomatoes and basil and pick a few herbs for your meal. In a light-filled space designed for cooking classes, Cinzia will first prepare a Tuscan appetizer for your to enjoy. Then roll up your sleeves and learn to cook regional Italian pasta from recipes passed down through generations of Cinzia’s family in a hands-on Italian cooking class. Choose between a cooking menu that includes either three handmade pastas and sauces (which might include pastas such as pappardelle, tagliatelli, tortellini or gnocchi) or a pasta and meat main course. You will also learn to create a seasonal side vegetable and dessert with both menus. End your meal with a traditional Italian dessert you’ve created such as a tiramisu, panna cotta or brutti ma buoni (“ugly but good”) biscuit and hazelnut dessert. Enjoy learning about the tricks and techniques involved in cooking Italian family recipes before you sit down at the table to share the meal you helped prepare with Cinzia.

Your interactive cooking session is located on Cinzia’s home patio. Observe Cinzia as she prepares a Tuscan appetizer for your indulgence before you’ll get the chance to dive in and learn how to produce Italian pasta from recipes inherited through generations of Cinzia’s lineage. You will acquire the skills to prepare three main courses from scratch, accompanied by a side or dessert.

You can opt for a cooking routine that comprises either three manually made pasta dishes or a pasta and meat entrée. Your learning experience will also encompass the making of a seasonal vegetable side and dessert. If you go with the pasta selection, you will acquire skills for cooking three distinct types of pasta teamed with three different sauces that you will also learn to prepare. If your preference is a pasta and meat course, you will master the art of making one pasta and a meat dish. The meal culminates with a traditional Italian dessert.

Memories to Last a Lifetime - An amazing hands-on experience for our family of 5 (age 10 - adults) in the private home of an expert. We made pasta from scratch, prepared a chicken dish, made panna cotta and enjoyed a beautiful meal together. Great memories!

Delicious dinner with Alessio - We had a great evening with Alessio Vallini, aka Fungomaniac, at his apartment about a mile and a half from our hotel on the east side of Florence. Allessio had fresh mushrooms HE HAD HUNTED earlier that week! We prepared them in a delicious crostini. For our main course, Alessio taught us to make pasta ravioli (first time). We felt like we had a friend living in town. Everything was incredibly delicious! To cap things off, we had a wonderful orange shortbread with fresh whipped cream that was his grandmother’s recipe and was delightful. He also shared the recipes freely so we can try them when we are home. I would highly recommend a class and dinner with Allesio when you are in Florence. You will love it.

Fun way to spend a night. - So fun! Cinzia taught us about the traditional Tuscan method of making pasta. First, we prepared a protein pasta dough. Next we let the dough rest while we prepared a potato and spinach gnocchi. Then we prepared tagliatelle with a classic tomato garlic sauce, pecorino stuffed ravioli with pear and shallot sauce and gorgonzola cream sauce for the gnocchi. For dessert, we prepared a coffee mousse. My family had a lot of fun. For planning purposes, I had difficulty getting a taxi to Cinzia's and back to the hotel so I would recommend making arrangements for transportation in advance. Her home is roughly a 15 minute drive from the Piazza del Duomo.

Cinzia is a wonderful chef and host! - Cinzia is a delight! I would highly, highly recommend booking this experience with her. Our boys loved making their own pasta, and we had so much fun putting all the ingredients and courses together. Cinzia was a terrific host, and I would love to book her again to come to our flat if we have a full kitchen.

Amazing Tuscan dinner! - Such a lovely evening! My dad and I took Cinzia’s cooking class and it was the highlight of our time in Florence. The patio was beautiful and we learned skills we will definitely use when returning back to the US. Overall, it felt like we were having a fun night in a friend’s home and we can’t wait to make our own pasta at home! Thank you Cinzia!

AMAZING! - Wow! What a fun way to immerse yourself into the Tuscan culture with a pasta class at Cinzia’s home. This experience is one of our favorite memories from our 2 week trip to Italy. Cinzia provided an appetizer and wine while she explained the menu and walked through how to prepare each dish. Then she demonstrated each step and allowed us to prepare three different menu items plus a dessert. The pasta was SO good. Cinzia was very hospitable and so much fun to visit with. We enjoyed getting to know her, her family history, and learn some of her cooking secrets. She provided the recipes that we made so we can enjoy them for years to come. Highly recommend this experience!
