The sampling menu will consist of finger food and tapas crafted by our chef: - Tapas highlighting Lentu Bread, known locally as Pane Modde in central Sardinia, which is a flatbread sliced and filled with a variety of seasonal ingredients. For instance, the year-round Underbrush tapas combines purpuzza (fresh pork sausage) with sautéed porcini mushrooms and a basil mayonnaise
- Tapas served in crispy rice waffles, including the Gift of Venus with succulent red shrimp, wasabi pea puree, and smooth burrata cream
- Tapas without the waffle shell: deep-fried culurgiones stuffed with the traditional Ogliastra blend of potatoes and mint
- Tapas presented in a bowl accompanied by either a warm or chilled sauce: the chef’s special Porco Rosso features marinated pork belly with a crunchy skin, a fruity tomato sauce that’s a blend of Sardinian and Asian flavors, or the Gazpacho tapas with tomato and watermelon, fresh seafood of the day, and a puffed fregola crisp (as an alternative to rice)

In the charming city of Olbia, located in the north-east of Sardinia, you have the opportunity to embark on a culinary journey exploring delectable dishes from traditional Sardinian cuisine, reimagined in a contemporary style. A proficient chef will masterfully pair different types of tapas, crafted from bread, waffles or bowls, with a selection of local wines. The dishes are prepared with fresh, seasonal ingredients to augment their vibrant flavors. This gastronomical delight is offered throughout the year, and is suitable for kids, making it perfect for a pleasant lunch or dinner.
The menu changes every month, reflecting the availability of seasonal produce in the region. Ten dishes, comprising of tapas inspired by Sardinian traditions and innovatively modernized, with fillings of meat, fish, vegetables, cured meats, cheeses and beyond, are paired with four different types of seasonal wine (red, muscat, and sparkling).
Kids of all ages are more than welcome, with a bespoke menu and non-alcoholic beverages exclusively available for them.
