Culturale Pasta International Academy - You will learn how to make many types of homemade pasta in a real pasta laboratory, reviewed among the “top 10 pasta factory in Rome”. we will start with handmade pasta, made with different types of flour: such as spelled, buckwheat and wholemeal flour. We will make thin puff pastry, explain safe food cutting procedures, make three types of ravioli, tortellini, fettuccine with two typical Italian sauces. The experience includes a delicious Italian cheese tasting with prosecco. We can welcome guests allergic to GLUTEN and VEGAN guests
    We will cook all the pasta and sauces made during the class, eating our different types of pasta made, while sipping a good Italian wine. An express preparation of tiramisu will follow as dessert. Furthermore, all participants will be offered a free exclusive professional chef’s hat with the “Pastificio Faini” logo. In addition to the normal programme, a different version will be presented every day of the week: Monday-Saturday carbonara sauce; Tuesday-Wednesday Thursday and Friday Cacio e Pepe Sauce.

Throughout our 4-year journey at our pasta shop, Angelo and I have garnered numerous commendations, including recognition in the renowned ‘Gambero Rosso’ guide since 2017, and ranking among the top 10 pasta establishments in Rome. The ‘pastificio’, or pasta store in Italy, is a cherished locale for procuring fresh pasta to prepare at home. Our pasta craft is deeply inspired by the distinct paste our grandmother created in her kitchen during our childhood. Her invaluable legacy propelled us towards actualising our dream of teaching the traditional Italian pasta-making method to masses at our ‘EX pastificio’, thus imparting the warmth and dedication of our lineage.

We are wholeheartedly engaged in conducting high-quality cooking classes where we instruct on the art of making fresh homemade pasta, simple yet effectively. This enables our participants to replicate the learnt recipes in their home environment.

You’re missing out if you don’t do this class! - What a fun food experience! Chef’s Emanuele and Angelo are great people and fantastic instructors. Our family enjoyed the night and left with the knowledge and confidence to make delicious pasta dishes on our own. Just returned home and went to the store to get the ingredients so we can make pasta tonight! In Florence I got lucky and found a kitchen store where I bought a rolling pin like we used in class. My favorite souvenir! Highly recommend to anyone from novice to advanced cooks interested in learning new techniques, eating a great meal, and having a really fun evening!

An evening to remember… - Our pasta class was on the last evening we had in Rome, and considering all of the incredible experiences we’d already packed into our week, we weren’t expecting to walk away feeling as blown away as we were. We homeschool our sons (7 and 10), and travel a good bit. When we plan trips, we always like to find hands-on experiences so they’re learning about different cultures through actually participating and doing the things that particular culture/country is known for. We’ve completed cooking classes in other countries that were excellent, but our evening with Emanuele and Angelo shot straight to the top of our list of favorite experiences… maybe ever! Everyone asks what the best part of our trip was, and the boys immediately go to the pasta class as not only their favorite activity, but also their favorite meal! We’d had a private tour of the Vatican, a day-long private tour that was sort of an overview of all of Rome, the boys had done “gladiator school”, we’d eaten incredible meals, and yet the pasta making tops our list of memorable experiences. There wasn’t a dull moment- Angelo and Emanuele were so kind, so engaging, they were funny, patient, encouraging, well-organized, and perhaps the best thing to witness was the way they both exuded such a passion for sharing their culture and their tradition with all of us in the class. As a side note- I’m an interior designer. The right lighting and ambience mean a lot to me and are the first thing I notice about wherever I am. The way they’ve set the place up is so beautiful. You walk in and your eye immediately goes toward taking in these rustic brick ceilings, a gorgeous table set with fresh flowers and candles, the workspace felt well-lit, yet still warm and intimate. The setting and the music really added something extra special to the whole evening. Lastly- although we don’t have any allergies or food restrictions to accommodate ourselves, there was a woman there who was gluten-free. I was impressed with how much attention they paid to making sure they got everything right for her. I just wanted to mention that for anyone reading this who needs special accommodations. To close out this (long) review, we just want to thank Emanuele and Angelo for such a great time. We will absolutely be back for another class on our next trip to Rome. Thank you both :)

Best Cooking Class!! - Such an amazing class! I would recommend this to anyone traveling to Rome. It was so much fun and the dinner we made was delicious! Chef Emanuele is so awesome and has the best energy! I even gifted this class to my parents for their trip!

Amazing experience, so much fun! - This was easily the best thing we did in Rome our whole holiday. The whole team were so lovely, so funny and so knowledgeable and they came and sat to eat dinner with us which was a lovely touch. The class was well paced, a mix of cooking, drinking, eating and chatting - we never felt like we were stuck doing one thing more than another, and it worked well to get all the different parts done, without having to wait around. We learnt absolutely loads, the info was easy to digest and I felt like I could do it from home, but never felt like a school lesson, and the making was hard but not impossible! The group size was small enough that you got enough attention, and everyone in the group could chat and get to know each other, and the room/kitchen was beautiful. We did this the first night we arrived which was great as we got to try loads of dishes which we could try again on the trip, as well as getting some amazing recommendations for bars and restaurants. Honestly couldn't recommend this experience more, it was so much fun.

Super fun and delicious experience at Pasta Lab - My two kids (ages 14 and 10) and I had so much fun at the Pasta lab! It was definitely a highlight during our visit to Rome. Angelo and Sulemon (sorry if I spelled this incorrectly) were both great with my kids, and really positive energy. The other people in the class were lovely as well. My sons asked me to buy a mattarello pasta rolling pin so that we could make it all at home; the pasta we made was so delicious. Highly recommend this experience!
