  • Orchid Hill Drive - Jerk cooking is an authentic Jamaican way to cook meat. Whether it is pork, chicken, beef or fish, the meat is seasoned and slowly cooked over an open fire or on a barbecue grill. The seasoning is made up of local/regional spices like scallions, onion, thyme, pimento (all spice), cinnamon, nutmeg, peppers and salt. The first taste of jerked food is hot with pepper, and as you eat the flavors of all the other spices mingle in your mouth giving an explosion of stunning flavor. It is for this reason why all the other islands have adopted Jerk.

Jerk is now viewed as a regional food, and everyone has their own special recipe to make jerk seasoning. In Nicole’s class, Nicole will introduce you to all the jerk spices, provide a history about jerk, and discuss the various ways jerk seasoning can be used to give your food its own West Indian style when you return home.

Once lunch is ready, guests will enjoy eating on our large veranda overlooking the Caribbean Sea (and the hummingbirds that frequent our orchids).

  • Coconut Crisps and/or Green Plantain Chips with Pineapple Salsa - This starter is served in all four classes and is sometimes replaced with Cassava Chips.
  • Jerk Chicken (or Tofu for vegetarians) with Grilled Pineapple - Dish is also served with Jerk Sweet Plantain Tostones, Red Beans and Rice in Coconut Milk, and a Garden Salad
  • Coconut Custard Tarts - Rich, tasty, and one of our most popular desserts. It is served with our Coordinating Curry, Jerk and Seafood classes.
Additional Information

Jerk cooking embodies the true essence of Jamaican culinary arts. It pairs well with a wide array of proteins such as pork, chicken, beef, or fish, each one carefully seasoned and gently cooked over a blazing open flame or a searing barbecue grill.

The term ‘Jerk’ encompasses various regional spices like scallions, thyme, all-spice or pimento, and cinnamon. The initial taste of jerk cuisine is a fiery punch of pepper, but, as you dig in, the other spices come to life, creating an explosion of spectacular flavors. Given its unique taste, it’s no surprise that other islands have adapted the jerk seasoning to their cuisine.

Currently, Jerk is perceived as a regional speciality, with everyone boasting their own unique formula for jerk seasoning.

Nicole will guide you through the myriad of jerk spices and their history and elaborate on the diverse ways jerk seasoning can be incorporated to instill a taste of West Indian cuisine into your dishes back home.

This course goes beyond discovering new taste profiles. It entails having fun cooking with newfound friends within the comforts of a West Indian dwelling, with a spectacular view of the Caribbean Sea that serves as the backdrop!

  • All recipes depend on the season and availability
  • A minimum of 2 people required to hold a class. If only 1 individual, join an existing class.
  • We require multiple hand washings and masks to be warn if a guest has flu-like symptoms.

We are unable to offer transportation to our home, but we do provide customized directions and information for all of our guests. When you arrive at our home, we always meet you and talk with the taxi driver to make sure he or she will pick you up on time when we are finished. We work with cruisers, hotel guests, and BnB guests all the time so we can help you find our way to our home via taxi or a car rental.

Amazing...Highly recommend!!! - This was an absolutely amazing experience and one of my favorite excursions of all the trips we have done! Nicole is an amazing host! I actually came home and bought the Ninja blender set just to remake all the recipes exactly as we did there. They turned out amazing and everyone loved it! My only regret is that I did not book again during that week to try one of Nicole's other meals. I highly recommend this unique experience!

Must do Excursion! - Let me share that I am not the most savvy cook. However, after attending the class at Nicole's Table I have found a new zest for being in the kitchen. Cooking with Nicole and hearing her share insight of fresh herbs and how things are done in the island was insightful. Her rum punch is enough to make you fly back to get a picture!

Great time - It was just my wife and I and Nicole and her husband were very friendly and easy to talk too. The food was delicious and we've made most of it again at home since doing this in January. Their home is lovely and has great views out on on the back porch. I highly recommend doing this while in Antigua!

Oh Sip, it's a Girl's Trip - What a fabulous experience. Girls trip to Antigua to celebrate a friend's 70th birthday. One of our first adventures was Nicole's Table. We learned to cook jerk chicken, red beans and rice, plantain, and a delicious tart desert. Nicole was not only knowledgeable of her craft, but a great hostess. Thank you, Nicole for welcoming us into your home.

Best thing to do in Antigua - This was the best thing we did while in Antigua. I highly recommend taking the jerk chicken class. The cooking was enjoyable and the food was great. We plan to take some additional classes with Nicole when we return to Antigua.

Nicole is AMAZING!! - We spent a great day with Nicole today. First, her home is welcoming and the view is AMAZING! We were instantly welcomed, even though our taxi arrived 45 minutes early to the event. We got a chance to spend some time with her husband, Adam, who is a great guy but definitely takes a back seat to the experience and lets Nicole do her thing. We got to make jerk marinade for a whole chicken, pineapple salsa, plantain chips with an amazing dip, pumpkin fritters and red beans and rice. We also made a coconut custard tart for dessert to top it all off. There were 3 couples at the event and we all chipped in to make the food and eat it for lunch. It was incredible eats!! Nicole’s assistant Iona was awesome as well and we got to drink rum punch throughout the day. All in all, this is a solid 10 out of 10! I’m going to work with Nicole to do a Zoom cooking class with my work team in the near future. DONT MISS THIS!!

BEST TIME EVER AT A PORT!!! - Nicole and Adam are incredibly gracious to open their home to strangers; to teach strangers how to cook an authentic Caribbean meal; and then to share a meal with the same strangers! Outstanding class! Outstanding human beings! Super time in the Caribbean! Please keep up the good work. You will not be sorry if you miss a beach to learn to cook a delicious meal that will provide memories, comfort, and inspiration! Wish I could give them twenty stars!!
