Have you ever heard of molokhiya? Or when you’re cooking something, you need to make a sound (a gasp) to prepare it properly? Yes, that’s molokhiya.

It’s one of the oldest and most famous dishes in Egypt.

A humorous Egyptian tradition involves making a ‘molokhiya certificate’ while cooking molokhiya. This term translates to ‘Ghasib Molokhiya’ in English. The tradition requires the cook to suddenly inhale with their mouth open while adding garlic to the bowl.

Before the garlic burns, it is quickly transferred from the pan to the molokhiya bowl. As the hot fat meets the green soup, it sizzles, and the chef is supposed to gasp loudly. After a few final stirs, the molokhiya is ready.
